Preparation Steps
  1. Preheat your oven to 325°F (165°C). Gather your ingredients and equipment.
  2. In a medium bowl, crack the eggs and whisk until just combined, about 30 seconds.
  3. Warm the milk in a saucepan over medium-low heat until small bubbles form.
  4. Whisk the warm milk into the eggs gradually to temper them.
  5. Mix in sugar, vanilla extract, and salt, whisking until dissolved.
  6. Strain the custard mixture through a fine sieve into a clean bowl.
  7. Pour the strained custard into ramekins, filling them three-quarters full.
  8. Place the baking dish in the oven and add hot water to create a water bath.
  9. Bake for 35-40 minutes until the edges are set and the centers are slightly jiggly.
  10. Allow the ramekins to cool to room temperature before refrigerating for at least 2 hours.
  11. Garnish with ground nutmeg or desired toppings before serving.
