  • 2 pounds Salmon Fillets fresh or thawed
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Parsley optional
  • 1 teaspoon Red Chili Flakes adjust for heat
  • to taste Salt essential for flavor
  • 2 tablespoons Olive Oil for seasoning
For the Base
  • 1 cup Jasmine Rice pre-cooked
  • 1 can Chickpeas drained and rinsed
  • 1 cup Cherry Tomatoes sliced
  • 1/2 cup Kalamata and Green Olives pitted
  • 2 tablespoons Fresh Lemon Juice freshly squeezed
For the Topping
  • 1 cup Feta Cheese crumbled
  • 1 tablespoon Chopped Fresh Oregano optional

Method
 

Step-by-Step Instructions for Mediterranean Salmon
  1. Heat a large skillet over medium heat for about 4 minutes.
  2. Season the salmon fillets with smoked paprika, dried oregano, dried parsley, red chili flakes, salt, and a drizzle of olive oil.
  3. Cook the salmon in the skillet skin side up for about 4 minutes.
  4. Flip the salmon fillets skin side down and cook for an additional 5 minutes.
  5. Remove salmon, add rice, chickpeas, tomatoes, and olives to the skillet. Stir with fresh lemon juice for 2-3 minutes.
  6. Mix feta with olive oil and lemon juice in a separate bowl.
  7. Combine half feta mixture with the rice blend, place salmon back in and warm for another minute.
  8. Top with remaining feta mixture and garnish with fresh oregano before serving.
