  • 1.5 pounds waxy potatoes small or red potatoes work best
  • 1/4 cup fresh parsley substitute with chives if desired
  • 1/4 cup fresh dill fresh thyme is a good alternative

  • 1 number shallot optional; diced red onion can be used instead
  • 1/4 cup cornichons or dill pickles; capers can be a substitute
For the Dressing
  • 1/2 cup olive oil can be swapped with canola oil
  • 2 tablespoons red wine vinegar or sherry vinegar
  • 2 tablespoons Dijon mustard the key flavor in the vinaigrette
  • 2 tablespoons grainy mustard optional for added texture
  • 1 clove garlic optional; omit for a milder taste
  • 1 tablespoon cornichon juice optional; pickle juice can be used
  • to taste salt essential for flavor enhancement
  • to taste pepper essential for flavor enhancement

Cooking Instructions
  1. Begin by placing cubed potatoes in a large pot and covering them with cold water. Add a pinch of salt, then bring to a boil over high heat. Reduce heat and simmer for about 8 to 10 minutes, until tender. Drain and set aside to cool completely.
  2. While the potatoes cool, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and black pepper in a medium bowl. If using garlic or cornichon juice, add those in as well.
  3. In a large mixing bowl, gently toss cooled potatoes with parsley, dill, green onions, and shallots. Add chopped cornichons and mix carefully.
  4. Pour the prepared dressing over the potato mixture and toss gently, ensuring each piece is coated. Allow to chill for about an hour.
