Ingredients
  

For the Salad
  • 3 cups Corn Frozen corn can be used if fresh is unavailable.
  • 1 cup Pearl Couscous Measure dry couscous for best results.
  • 2 cups Chicken Broth Substitute with vegetable broth for vegetarian option.
  • 1 cup Water
  • ½ cup Lime Juice About 6-8 limes yield this amount.
  • 2 teaspoons Salt For balancing flavor.
  • ½ unit Red Bell Pepper Finely chopped.
  • 2 tablespoons Red Onion Finely chopped.
  • ½ bunch Cilantro Chopped; parsley can be a mild substitute.
  • 2 units Green Onions Use green parts.
  • 1 unit Jalapeño Pepper Deseed for less heat; omit for a milder salad.
  • ½ cup Sour Cream Greek yogurt can be used as a substitute.
  • ¼ cup Mayonnaise Vegan mayo can be used for dairy-free options.
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • ½ teaspoon Black Pepper Adjust per taste.
  • ½ cup Cotija Cheese Feta can be used as a substitute.
For the Dressing
  • ¼ cup Additional Lime Juice Adjust based on taste preference.
  • ½ cup Sour Cream Substitute with Greek yogurt for healthier option.
  • ¼ cup Mayonnaise A great vegan mayonnaise works too.

Method
 

Cooking Instructions
  1. Preheat your grill to medium heat and grill the corn for 8 to 10 minutes until charred and tender. Allow to cool and cut kernels off cobs.
  2. In a saucepan, combine chicken broth, water, and lime juice. Bring to a boil, stir in couscous, cover, and lower heat to simmer for about 10 minutes, then fluff and cool.
  3. In a separate bowl, whisk together additional lime juice, sour cream, mayonnaise, smoked paprika, ground cumin, and black pepper until smooth.
  4. In a large bowl, combine grilled corn, cooled couscous, red bell pepper, red onion, cilantro, green onions, and jalapeño.
  5. Drizzle dressing over the salad mixture and toss gently to combine.
  6. Sprinkle cotija cheese over the salad, season with salt and pepper to taste, and serve.
