Step-by-Step Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion, 3 minced garlic cloves, and 2 diced celery stalks. Sauté for about 4–5 minutes until softened.
- Sprinkle in ¼ cup of all-purpose flour, stirring constantly for 1–2 minutes. The mixture should turn a light golden color.
- Gradually pour in 4 cups of chicken broth while stirring to avoid lumps. Once incorporated, introduce 2 cups of diced chicken breast, 1 teaspoon of Italian seasoning, and 1 teaspoon of dried thyme, then bring to a boil.
- Reduce heat and stir in 1 pound of gnocchi. Allow to cook for 3–4 minutes or until they float to the surface.
- Mix in 1 cup of shredded carrots and 2 cups of fresh spinach. Simmer for another 1–2 minutes until spinach wilts.
- Pour in 1 cup of heavy cream, stirring gently to create a creamy texture. Season with salt and pepper to taste.

Notes
For a vegetarian version, replace chicken broth with vegetable broth and omit the chicken.
