Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C). Halve the bell peppers, remove seeds, and brush with olive oil. Roast for about 20 minutes until tender.
  2. Wilt fresh spinach in the microwave for 1-2 minutes, cool slightly, and chop finely.
  3. In a mixing bowl, combine wilted spinach, ricotta, mozzarella, parmesan, green onions, basil, parsley, dried herbs, eggs, and breadcrumbs. Mix until well combined.
  4. Stuff the roasted pepper halves with the ricotta mixture and return to the baking sheet.
  5. Combine remaining breadcrumbs with olive oil and sprinkle over the stuffed peppers.
  6. Lower temperature to 350°F (176°C) and bake for approximately 30 minutes. Broil if needed for a few minutes until topping is golden.
  7. Remove from the oven, let cool slightly, and serve paired with a salad or crusty bread.
