Peanut Dressing
  1. In a medium bowl, whisk together the peanut butter, low sodium soy sauce, brown sugar (or honey), rice wine vinegar, minced garlic, fresh ginger, and sriracha sauce until you achieve a smooth consistency.
  2. If the mixture appears too thick, thin it out with a splash of water until the desired creaminess is reached.
  3. Set aside this delightful dressing to infuse your Thai Peanut Chicken Wraps with flavor.
Prepare the Filling
  1. In a large mixing bowl, combine the chopped cooked chicken breast, coleslaw mix, grated carrots, fresh cilantro, and roughly chopped roasted peanuts.
  2. Toss the ingredients together gently until evenly distributed.
Dress the Filling
  1. Drizzle the prepared peanut dressing over the chicken filling mixture.
  2. Carefully toss everything together to ensure each piece is coated with the flavorful dressing.
  3. Allow the mixture to sit for about 3–5 minutes.
Warm the Tortillas
  1. Wrap the large flour tortillas in a damp paper towel and place them in the microwave.
  2. Heat them for about 30 seconds or until they are pliable.
Assemble the Wraps
  1. Lay each warmed tortilla flat on a clean surface.
  2. Spoon a generous portion of the filling mixture into the center of each tortilla.
  3. Fold the sides of the tortilla inwards, then roll it tightly from the bottom to the top.
Serve Immediately
  1. Serve the Thai Peanut Chicken Wraps immediately.
  2. Consider drizzling more peanut sauce on top or serving it on the side for dipping.
