  • 1/2 cup creamy peanut butter natural preferred
  • 3 tablespoons low sodium soy sauce or tamari for gluten-free
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons rice wine vinegar or apple cider vinegar
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • to taste none sriracha sauce for spice
  • as needed none water to thin dressing
For the Filling
  • 2 cups chopped cooked chicken breast rotisserie chicken works well
  • 2 cups coleslaw mix pre-packaged or fresh shredded cabbage
  • 1/2 cup grated carrots optional
  • 1/4 cup chopped fresh cilantro or green onions
  • 1/3 cup roughly crushed roasted peanuts substitute with other nuts if desired
For the Wrap
  • 4 large flour tortillas or large lettuce leaves for low-carb

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together peanut butter, soy sauce, brown sugar, rice wine vinegar, garlic, ginger, and sriracha. Gradually add water until smooth.
  2. In a large bowl, combine chicken, coleslaw mix, grated carrots, cilantro, and crushed peanuts. Toss gently until well combined.
  3. Pour the dressing over the chicken mixture and gently toss to combine, allowing it to rest for 3-5 minutes.
  4. Warm tortillas in the microwave, wrapped in a damp paper towel, for about 30 seconds.
  5. Lay each warm tortilla flat, add filling to the center, fold in the sides, and roll tightly. Cut in half if desired.
