  • 1/4 cup Coconut Milk (optional) Yogurt can be a delightful alternative.
For the Dipping Sauce
  • 1/4 cup Thai Sweet Chili Sauce
  • 1 tbsp Soy Sauce Use tamari to keep it gluten-free.
  • 1 tbsp Fresh Lime Juice

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine all meatball ingredients and mix gently until just combined.
  3. Scoop portions and roll them into 1-inch meatballs, placing them evenly on the baking sheet.
  4. Bake in the oven for 18-20 minutes until golden brown and cooked through.
  5. While baking, whisk together the dipping sauce ingredients in a small bowl.
  6. Serve the meatballs warm with the dipping sauce.
