Ingredients
  

Marinade
  • 1 cup olive oil Can use avocado oil or neutral cooking oil.
  • 2 tablespoons fresh lemon juice Lime juice can be used as a substitute.
  • 4 cloves garlic Can substitute with garlic powder (½ tsp for every 2 cloves).
  • 1/4 cup fresh parsley Can substitute with cilantro or chives.
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste salt and black pepper
  • to taste crushed red pepper Optional.
For Serving
  • 1 medium lemon wedges For garnish.
Shrimp
  • 1 pound jumbo shrimp Peeled and deveined.

Method
 

Preparation
  1. In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, parsley, oregano, paprika, salt, and black pepper. Set aside.
  2. Add the shrimp to the marinade, tossing to coat evenly. Let marinate at room temperature for about 10-15 minutes.
  3. Preheat the grill to medium-high heat (375°F to 400°F). Test the heat with your hand above the grill grate.
  4. Soak wooden skewers in water for at least 30 minutes if using them. Thread the marinated shrimp onto the skewers.
  5. Place the skewers on the grill and cook for 2-3 minutes on each side until the shrimp is pink and slightly charred.
  6. During the last minute of grilling, brush the shrimp with any remaining marinade for extra flavor.
  7. Remove from the grill and serve hot with lemon wedges on the side.
