  • 1 cup Frozen Peas Just defrosted
  • 1 cup Pea Shoots Optional
  • 1/4 cup Grated Parmesan Cheese Hard cheese works well as a substitute
  • 3 tablespoons Olive Oil Extra virgin for best taste
  • 1 tablespoon Lemon Juice Fresh preferred
  • 1/2 clove Garlic Fresh for best flavor
Bread
  • 1 loaf Ciabatta Bread Any rustic or crusty bread can be used
  • to taste Black Pepper Freshly cracked for best flavor

Method
 

Preparation
  1. Pour the defrosted frozen peas into a food processor. Add pea shoots, grated Parmesan, olive oil, lemon juice, and garlic. Season with salt and black pepper, then pulse to form a rough paste.
  2. Preheat the broiler to high and line a baking sheet with parchment. Slice ciabatta into halves, drizzle with olive oil, and toast under broiler for 2-3 minutes on each side until golden.
  3. Remove toasted ciabatta, let cool slightly, then rub with leftover garlic clove.
  4. Spread pea topping over each slice, garnish with extra Parmesan and lemon zest, add pea shoots, drizzle with olive oil, and finish with black pepper.
