- Pour the defrosted frozen peas into a food processor. Add pea shoots, grated Parmesan, olive oil, lemon juice, and garlic. Season with salt and black pepper, then pulse to form a rough paste.
- Preheat the broiler to high and line a baking sheet with parchment. Slice ciabatta into halves, drizzle with olive oil, and toast under broiler for 2-3 minutes on each side until golden.
- Remove toasted ciabatta, let cool slightly, then rub with leftover garlic clove.
- Spread pea topping over each slice, garnish with extra Parmesan and lemon zest, add pea shoots, drizzle with olive oil, and finish with black pepper.
