  • 4 cups Potatoes, cut into 1-inch cubes Any type of potato can be used
  • 1/2 cup Monterey Jack Cheese, shredded Try cheddar or pepper jack for different flavor profiles
  • 8 slices Bacon Can substitute with sausage or ham
For the Tortilla
  • 8 6-inch Soft Corn Tortillas Flour tortillas can be used for a softer texture
For Cooking
  • 2 tablespoons Canola Oil Olive oil can be used as a substitute
  • 2 1/2 tablespoons Taco Seasoning Use store-bought or homemade

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Place bacon strips on a baking sheet and bake for about 10 minutes until crispy, then chop into pieces.
  2. Heat 2 tablespoons of canola oil in a large skillet over medium heat. Add cubed potatoes and taco seasoning, cooking for 15-20 minutes until golden.
  3. Warm corn tortillas in a dry skillet over low heat for 15-30 seconds on each side.
  4. Scramble well-beaten eggs in a separate skillet over medium heat, cooking until slightly soft, then remove from heat.
  5. In a 13x9-inch baking dish, stand warmed tortillas upright and fill each with cooked potatoes, scrambled eggs, bacon, and cheese.
  6. Bake assembled tacos in the oven for about 10 minutes or until cheese is melted.
  7. Serve warm and enjoy with family or friends!
