Step-by-Step Instructions
  1. Rinse the rice under cold water until the water runs clear. Combine rinsed rice with water or chicken broth in a medium saucepan. Bring to a boil, then reduce to a simmer and cover for 15 minutes.
  2. Heat a large skillet over medium heat and add olive oil. Add ground beef or turkey, breaking apart with a spatula. Cook for about 5-7 minutes until browned.
  3. Sprinkle taco seasoning over cooked meat, mix well, and cook for an additional 2-3 minutes until thoroughly coated.
  4. In a small saucepan, combine black beans and corn. Add salt and pepper, and heat over medium for about 5 minutes.
  5. Sauté chopped onions and bell peppers in the same skillet for about 5-7 minutes until soft.
  6. Fluff the rice gently with a fork after 5 minutes of sitting covered off heat.
  7. In serving bowls, layer the rice, then seasoned meat, followed by the black bean and corn mixture. Top with diced tomatoes, shredded lettuce, and cheddar cheese.
  8. Drizzle with salsa and add optional garnishes of cilantro and lime wedges.
