- Rinse the rice under cold water until the water runs clear. Combine rinsed rice with water or chicken broth in a medium saucepan. Bring to a boil, then reduce to a simmer and cover for 15 minutes.
- Heat a large skillet over medium heat and add olive oil. Add ground beef or turkey, breaking apart with a spatula. Cook for about 5-7 minutes until browned.
- Sprinkle taco seasoning over cooked meat, mix well, and cook for an additional 2-3 minutes until thoroughly coated.
- In a small saucepan, combine black beans and corn. Add salt and pepper, and heat over medium for about 5 minutes.
- Sauté chopped onions and bell peppers in the same skillet for about 5-7 minutes until soft.
- Fluff the rice gently with a fork after 5 minutes of sitting covered off heat.
- In serving bowls, layer the rice, then seasoned meat, followed by the black bean and corn mixture. Top with diced tomatoes, shredded lettuce, and cheddar cheese.
- Drizzle with salsa and add optional garnishes of cilantro and lime wedges.
