Method
 

Cooking Instructions
  1. Rinse 1 cup of uncooked white rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice with 2 cups of water or chicken broth, adding a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for 15-20 minutes until fluffy.
  2. Heat a heavy skillet over medium heat. Add 1 pound of ground beef or turkey. Use a spatula to break up as it cooks for about 7-10 minutes until evenly browned.
  3. In a separate pot, add 1 can of black beans with a splash of water, a teaspoon of cumin, and minced garlic. Simmer over low heat for about 5-7 minutes until heated through.
  4. Drain any excess fat from the meat, return it to the skillet, and sprinkle taco seasoning over the meat. Cook for an additional 2-3 minutes over low heat until the spices meld.
  5. In serving bowls, start with a layer of fluffy rice. Top with seasoned meat and a portion of black beans. Add diced tomatoes, shredded lettuce, and cheese.
  6. Drizzle with salsa and finish with a squeeze of lime juice. Optionally sprinkle chopped fresh cilantro on top. Serve immediately.
