- Melt 2 tablespoons of unsalted butter in a large skillet over medium heat. Toss in sliced peaches and sauté for about 1 minute.
- Add 2 tablespoons of brown sugar, 1 teaspoon of cinnamon, a pinch of nutmeg, and 2 tablespoons of water. Cover and simmer for 3 minutes.
- In a shallow dish, whisk together 4 eggs, 1 cup of milk, 2 tablespoons of sugar, 1 teaspoon of vanilla, ½ teaspoon of cinnamon, lemon zest, and salt.
- Heat another skillet and coat with butter. Dip brioche in custard for 30 seconds per side.
- Cook soaked brioche in the skillet for 2-3 minutes on each side until golden brown.
- Stack French toast slices and spoon the caramelized peach topping over them. Serve immediately.
