  1. Start by placing the chicken breasts in a single layer at the bottom of your slow cooker.
  2. In a medium-sized bowl, whisk together the pineapple juice, brown sugar, soy sauce, crushed pineapple, minced garlic, ground ginger, salt, and pepper.
  3. Pour the sauce over the chicken breasts, ensuring each piece is generously coated.
  4. Cover the slow cooker and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once the chicken is cooked, carefully remove it and make a slurry by whisking together the cornstarch and water.
  6. Stir the cornstarch slurry into the sauce remaining in the slow cooker and let it cook for about 10-15 minutes.
  7. Return the shredded or whole chicken back to the thickened sauce in the slow cooker and let it cook for an additional 10-15 minutes.
