  • 2 pounds Pork Ribs short ribs about 5-10 cm long
  • 2 tablespoons Oil neutral oil for frying
  • 3 cups Water for braising
Seasoning
  • 1 teaspoon Chili Powder optional, adjust to taste

Step-by-Step Instructions for Sweet Chinese BBQ Ribs
  1. Begin by heating 2 tablespoons of oil in a non-stick saucepan over medium heat. Add the finely chopped garlic and fry until it turns golden brown, about 2-3 minutes. Drain the garlic, reserving the oil, and set aside.
  2. In a large pot, bring enough water to a rolling boil over high heat. Add the pork ribs and boil for 5 minutes. Discard the water and rinse the ribs under cold water.
  3. Add the parboiled ribs back to the saucepan with ginger, soy sauce, oyster sauce, sugar, rice wine, and enough water to cover the ribs. Stir, lower the heat, cover, and simmer for about 60 minutes.
  4. Increase the heat to medium-high, remove the lid, and allow the liquid to reduce for about 10-15 minutes. Add the reserved garlic oil and mix the ribs frequently until browned for 5-10 minutes.
  5. Stir in the optional chili powder and add back the fried garlic for crunch. Toss everything together for another minute, then serve your Sweet Chinese BBQ Ribs hot.
