- Begin by heating 2 tablespoons of oil in a non-stick saucepan over medium heat. Add the finely chopped garlic and fry until it turns golden brown, about 2-3 minutes. Drain the garlic, reserving the oil, and set aside.
- In a large pot, bring enough water to a rolling boil over high heat. Add the pork ribs and boil for 5 minutes. Discard the water and rinse the ribs under cold water.
- Add the parboiled ribs back to the saucepan with ginger, soy sauce, oyster sauce, sugar, rice wine, and enough water to cover the ribs. Stir, lower the heat, cover, and simmer for about 60 minutes.
