Ingredients

  • 1 cup flour all-purpose or gluten-free
  • 1/4 cup sugar can substitute with coconut or brown sugar
  • 1/2 cup cold butter or vegan butter for dairy-free
For the Blackberry Filling
  • 2 cups blackberries fresh or thawed frozen
  • 2 tablespoons cornstarch or arrowroot powder for gluten-free
For the Pistachio Crumble
  • 1 cup pistachios or almonds/walnuts
  • 1/2 cup oats certified gluten-free if needed
  • 1/4 cup brown sugar can replace with coconut sugar
For the No-Bake Version
  • 1 tablespoon gelatin or chia seeds to set filling

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour, sugar, and cold butter, mixing until resembling coarse crumbs. Preheat oven to 350°F (175°C) and press into a lined baking pan. Bake for 15-20 minutes until golden brown.
Cook the Blackberry Filling
  1. In a saucepan over medium heat, combine blackberries, sugar, lemon juice, and cornstarch. Simmer for 8-10 minutes until thickened. Pour evenly over the cooled crust.
Make the Pistachio Crumble
  1. Mix chopped pistachios, oats, flour, and brown sugar. Stir in melted butter until moistened. Sprinkle over the blackberry layer.
Bake the Bars
  1. Return the pan to the oven and bake for 25-30 minutes until the crumble is golden brown. Allow to cool on a wire rack.
Chill and Slice
  1. Refrigerate the bars for at least 2 hours to set. Cut into squares using a sharp knife.
Serve and Enjoy!
