  1. Start by peeling and chopping the Yukon gold potatoes into evenly sized pieces. Place them in a large pot with cold water and add 1 tablespoon of salt. Bring to a boil over medium-high heat and cook for about 8 minutes, or until the potatoes are just tender but not falling apart. Drain the potatoes and allow them to cool slightly.
