Method
 

Preparation
  1. Wash and hull the fresh strawberries, then puree with sugar in a blender until smooth.
  2. Cook the strawberry puree in a saucepan over medium heat for 5-7 minutes until slightly thickened, then allow to cool.
  3. Beat cream cheese with sugar and vanilla until creamy and free of lumps, about 2 minutes.
  4. Whip the heavy cream in a separate bowl until stiff peaks form, then fold into the cream cheese mixture until smooth.
  5. Spoon cheesecake filling into waffle cones, layering with strawberry sauce and topping with crushed vanilla wafer cookies.
  6. Refrigerate the assembled cones for at least 1 hour before serving.
  7. Serve chilled, optionally garnishing with extra strawberry sauce and fresh slices.
