  • 1/4 cup Soy Sauce or Tamari
  • 2 tablespoons Honey or maple syrup for vegan option
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 1 tablespoon Sesame Oil or olive oil
  • 1 tablespoon Cornstarch mixed with water
For the Rice and Vegetables
  • 4 cups Cooked Jasmine Rice or other rice varieties
  • 2 cups Broccoli Florets
  • 1 cup Bell Pepper sliced
  • 1/4 cup Green Onions chopped
For the Garnish
  • 1 tablespoon Sesame Seeds optional

Method
 

Step-by-Step Instructions
  1. Prepare the sauce by whisking together soy sauce (or tamari), honey, garlic, ginger, and sesame oil until smooth.
  2. Marinate the chicken thighs with half of the sauce for 15 minutes.
  3. Heat skillet, cook marinated chicken for 8 to 10 minutes until golden brown.
  4. Remove chicken, add broccoli and bell peppers in skillet and stir-fry for about 5 minutes.
  5. Return chicken, add remaining sauce and cornstarch slurry. Simmer for 2 to 3 minutes.
  6. Serve rice as base, top with chicken and veggie mixture.
  7. Garnish with green onions and sesame seeds.
