Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Grease a mini muffin tin thoroughly with cooking spray or oil.
  3. In a medium mixing bowl, combine the ricotta cheese, well-chopped and drained spinach, grated Parmesan, egg, garlic powder, salt, and pepper.
  4. Gently fold in the breadcrumbs, being careful not to overmix.
  5. Spoon the mixture carefully into each muffin cup, filling them about halfway.
  6. Bake in the preheated oven for 15-17 minutes, checking for doneness around 12 minutes.
  7. Once baked, let the bites cool for about 5 minutes and release them from the muffin tin.
