Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease an 8x8-inch baking dish.
  2. In a large mixing bowl, combine cooked sushi rice, rice vinegar, sugar, and salt, then transfer to the baking dish.
  3. In another bowl, flake the salmon fillet and mix with mayonnaise, Sriracha, soy sauce, and sesame oil until well combined.
  4. Spread the salmon mixture evenly over the pressed rice base, then sprinkle shredded mozzarella cheese on top.
  5. Bake for 18-20 minutes until the cheese is melted and bubbly with a golden edge.
  6. Allow to cool for about 5 minutes, then garnish with sliced green onions and toasted sesame seeds before serving.
