Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, finely chopped onion, cilantro, jalapeño, minced garlic, ground cumin, chili powder, smoked paprika, and a sprinkle of salt and pepper. Mix thoroughly.
  3. Fold in the shredded cheddar cheese and crushed tortilla chips into the meat mixture.
  4. Crack an egg into the bowl and mix until fully combined.
  5. Scoop out portions and roll them into golf-ball-sized meatballs.
  6. Heat olive oil in an ovenproof skillet over medium heat and sear the meatballs for about 5 minutes until browned.
  7. Pour the Mexican-style tomatoes with green chilies over the meatballs and stir gently.
  8. Transfer the skillet to your preheated oven and bake for 15–20 minutes until internal temperature reaches 160°F (71°C).
  9. Let the meatballs cool for a few minutes, then garnish with fresh lime wedges before serving.
