  1. Prepare the mushrooms by cleaning and slicing into ¼-inch pieces.
  2. Whisk together the marinade ingredients until well combined in a medium-sized bowl.
  3. Coat the sliced mushrooms in the marinade and let sit for at least 20 minutes.
  4. Heat a skillet over medium heat with some neutral oil.
  5. Cook the marinated mushrooms in a single layer for 2-3 minutes on each side.
  6. Return all mushrooms to the pan with any remaining marinade and cook until it thickens.
  7. Serve hot over steamed rice, garnished with cucumber, sesame seeds, and scallions.
