  • 4 fillets Cod Skinless cod fillets
  • 2 tablespoons Oil Olive oil or avocado oil recommended
  • 2 tablespoons Lemon Juice Fresh juice is best
  • 1 teaspoon Paprika Consider smoked paprika for deeper flavor
  • 1/2 teaspoon Cayenne Pepper Adjust heat to preference
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Salt Adjust to preference
For the Slaw
  • 2 cups Purple Cabbage Shredded
  • 1 cup Carrots Shredded
  • 1 cup Frozen Corn Thawed
  • 1 tablespoon Jalapenos Chopped, adjust to taste
  • 1/4 cup Cilantro Chopped
For the Sauce
  • 1/2 cup Greek Yogurt Dairy-free yogurt can be used
  • 1/4 cup Mayonnaise Vegan mayonnaise optional
For Assembly
  • 8 tortillas Corn Tortillas Warm and slightly toasted

Method
 

Step-by-Step Instructions
  1. Marinate the Cod: In a bowl, combine oil, lemon juice, paprika, cayenne, ground cumin, and salt. Add the cod fillets and coat evenly. Marinate in the refrigerator for at least 30 minutes.
  2. Prepare the Slaw: In a bowl, combine purple cabbage, carrots, corn, jalapenos, cilantro, Greek yogurt, lemon juice, and salt. Mix well and chill in the fridge.
  3. Make the Sauce: Mix Greek yogurt, mayonnaise, lemon juice, paprika, and salt until smooth. Refrigerate until ready to serve.
  4. Cook the Fish: Heat a skillet over medium-high heat. Cook marinated cod for 3-5 minutes per side until cooked through. Remove and break into pieces.
  5. Assemble Tacos: Char tortillas, fill with cod, top with slaw, and drizzle with sauce. Add extra jalapenos and cilantro as desired.
