Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Mix well until smooth and marinate chicken thighs for at least 15 minutes.
  3. Place peeled and chunked russet potatoes in a pot, cover with salted water, and boil until fork-tender (15-20 minutes). Drain thoroughly.
  4. Return potatoes to pot over low heat. Add milk, unsalted butter, and smoked gouda cheese, then mash until creamy. Season with additional salt and pepper to taste.
  5. Transfer marinated chicken thighs to a baking dish, skin-side up. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C). Broil for an additional 2 minutes if desired.
  6. Plate the chicken alongside the creamy smoked gouda mashed potatoes and drizzle any pan juices over the chicken before serving.
