Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Mix well until smooth and marinate chicken thighs for at least 15 minutes.
- Place peeled and chunked russet potatoes in a pot, cover with salted water, and boil until fork-tender (15-20 minutes). Drain thoroughly.
- Return potatoes to pot over low heat. Add milk, unsalted butter, and smoked gouda cheese, then mash until creamy. Season with additional salt and pepper to taste.
- Transfer marinated chicken thighs to a baking dish, skin-side up. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C). Broil for an additional 2 minutes if desired.
- Plate the chicken alongside the creamy smoked gouda mashed potatoes and drizzle any pan juices over the chicken before serving.
