Step-by-Step Instructions
  1. In a large bowl, combine the chicken thighs with coconut milk, olive oil, chopped onion, minced garlic, grated ginger, chili paste, ground cumin, paprika, salt, and black pepper. Mix thoroughly until the chicken is well coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour or overnight for deeper flavor.
  2. Preheat your oven to 375°F (190°C). Allow the marinated chicken to sit at room temperature for about 15 minutes.
  3. Transfer the marinated chicken, along with the sauce, into a large baking dish, arranging the thighs in a single layer.
  4. Place the baking dish in the preheated oven and bake for 35-40 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. Once baked, remove the chicken from the oven and let it rest for about 5 minutes before garnishing with fresh lime juice and chopped cilantro.
