Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a large mixing bowl, whisk together 2 cups of almond flour, 1 scoop of protein powder, 1/4 cup of monk fruit sweetener, 1 teaspoon of baking powder, and a pinch of salt.
  3. Add 2 large eggs, 1/3 cup of melted coconut oil, 1/2 cup of Greek yogurt, and 1 teaspoon of vanilla extract to the dry mixture and stir until well incorporated.
  4. Pour the batter into the prepared baking dish and bake for 20-25 minutes until golden.
  5. Let the bars cool in the dish for about 15 minutes, then lift out using the parchment and transfer to a wire rack to cool completely.
  6. Prepare the frosting by mixing together 8 oz of softened cream cheese, 1/4 cup of protein powder, 1 teaspoon of vanilla extract, and 2 tablespoons of almond milk.
  7. Spread the frosting over cooled bars, slice into 16 squares, and refrigerate for at least 30 minutes before serving.
