For the Pretzels
  • 1 cup warm water between 105 to 115 degrees F
  • 1 tablespoon granulated sugar to feed the yeast
  • 2 teaspoons active dry yeast
  • 3.5 cups all-purpose flour up to 4 ½ cups can be used
  • 1 teaspoon table salt
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon vegetable oil for greasing
  • 10 cups water for bath
  • cup baking soda for the water bath
  • 1 large egg yolk for brushing
  • to taste tablespoon pretzel salt/coarse salt for topping
For the Honey Mustard Dip
  • ½ cup mayonnaise base for dip
  • 2 tablespoons honey
  • 2 tablespoons yellow mustard

Method
 

Step‑by‑Step Instructions
  1. Prepare yeast by stirring together warm water, granulated sugar, and active dry yeast. Let it sit for 5 minutes until frothy.
  2. Mix dough by adding flour, table salt, and melted butter to yeast mixture, then knead for 4-6 minutes until smooth.
  3. Let the dough rise in a greased bowl covered for about 1 hour until doubled in size.
  4. Preheat the oven to 450°F and prepare baking sheets.
  5. Prepare the water bath by boiling 10 cups of water and dissolving baking soda in it.
  6. Divide risen dough into 24 pieces, rolling each into a stick.
  7. Boil each stick in the baking soda water for 20-30 seconds.
  8. Place boiled sticks on sheets, brush with egg yolk, sprinkle with salt, and bake for 12-17 minutes.
  9. Make the dipping sauce by whisking together mayonnaise, honey, and yellow mustard.
