For the Beef
  • 1 lb Beef Sirloin or chuck roast or round steak as substitutes
For the Vegetables
  • 1 medium Onion yellow or white
  • 2 cups Bell Peppers mix of colors recommended
  • 2 cloves Garlic minced
For the Sauce
  • 2 cups Beef Broth low-sodium preferred
  • 2 cubes Beef Bouillon or vegetable bouillon for veggie version
  • 1/4 cup Soy Sauce or tamari for gluten-free
  • 2 tbsp Honey/Brown Sugar or maple syrup as a substitute
  • 1 tbsp Worcestershire Sauce vegan versions available
  • 1 tsp Ground Ginger or fresh grated for more flavor
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
  • 1 tbsp Cornstarch for thickening sauce

Method
 

Directions
  1. Slice the beef sirloin into even strips, pat dry with paper towels, and season with salt and pepper.
  2. Layer the seasoned beef strips in the slow cooker, topping with diced onion and sliced bell peppers.
  3. In a medium bowl, mix minced garlic, beef broth, crumbled bouillon, soy sauce, honey, Worcestershire sauce, ground ginger, salt, and pepper until smooth.
  4. Pour the sauce over the beef and vegetables in the slow cooker. Cook on LOW for 6-8 hours or HIGH for 3-4 hours until tender.
  5. If needed, mix cornstarch with cold water and stir into the slow cooker to thicken sauce, cooking uncovered for an additional 10-15 minutes.
  6. Gently stir everything before serving over rice or noodles, garnished with green onions or sesame seeds if desired.
