  • 2 pounds Beef Stew Meat Substitute with chuck roast or brisket if desired.
  • 2 tablespoons Worcestershire Sauce
  • 1 teaspoon Salt Adjust according to taste preference.
  • 1 teaspoon Black Pepper Freshly ground recommended.
  • 1 teaspoon Dried Italian Seasoning Herbes de Provence works well as a substitute.
  • 1 teaspoon Smoked Paprika Regular paprika can be used for milder flavor.
For the Veggies
  • 1.5 pounds Baby Potatoes Regular potatoes can be used if cut into similar sizes.
  • 4 cloves Garlic Fresh garlic is best; garlic powder can substitute (1 teaspoon = 1 clove).
For Cooking
  • 4 tablespoons Unsalted Butter Can replace with olive oil for a lighter option.
  • 2 tablespoons Olive Oil Avocado oil can also be used.
For Garnish
  • 1 tablespoon Fresh Parsley Feel free to use fresh chives or thyme.

Preparation
  1. In a large mixing bowl, combine beef stew meat with Worcestershire sauce, salt, black pepper, dried Italian seasoning, and smoked paprika. Toss until thoroughly coated. Set aside.
  2. Layer halved baby potatoes evenly in the bottom of your slow cooker. Drizzle half of the melted unsalted butter and olive oil over them, followed by minced garlic.
  3. Carefully place the seasoned beef on top of the potatoes. Drizzle the remaining melted butter and olive oil over the beef.
  4. Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours without lifting the lid.
  5. Once done, stir gently, check seasoning, add salt or pepper if needed, and garnish with parsley before serving.
