- Start by opening a can of skipjack tuna and draining the liquid thoroughly. In a medium bowl, combine the tuna with 2 tablespoons of extra virgin olive oil, 1 teaspoon of cumin, 1 teaspoon of chili powder, 1 teaspoon of garlic powder, 1 teaspoon of oregano, and a pinch of sea salt. Mix well until the tuna is evenly coated with the spices.
- Transfer the seasoned tuna mix to a frying or cast iron pan over medium heat. Allow it to cook for about 5 minutes, stirring occasionally to prevent sticking.
- After the initial heating, reduce the temperature to low and let the tuna mixture cook for an additional 10 minutes. Stir occasionally to ensure even cooking and prevent any sticking.
- Once cooked to your liking, remove the pan from heat. Serve right away, ladled over rice, in a tortilla, or atop a fresh salad. If you have leftovers, allow them to cool before transferring to an airtight container.
