For the Nutty Crust
  • cups Almond Flour Coconut flour for gluten-free
  • ½ cup Melted Butter Coconut oil for dairy-free
  • cup Sugar-Free Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
For the Optional Topping
  • 1 cup Optional Berry Topping Fresh or frozen berries mixed with sweetener and lemon juice

Method
 

Preparation
  1. In a mixing bowl, blend together the crust ingredients until crumbly. Press into the bottom of an 8x8-inch pan. Refrigerate for about 15 minutes.
  2. Beat the softened cream cheese until smooth. Gradually add in the filling ingredients, mixing until fluffy and free of lumps.
  3. Spread the cheesecake filling evenly over the chilled crust and smooth the top. Cover the pan with plastic wrap.
  4. Chill in the refrigerator for at least 4 hours, ideally overnight, for the filling to set.
  5. For the optional topping, heat berries with sweetener and lemon juice in a small saucepan until thickened. Cool to room temperature.
  6. Slice the chilled bars into 16 pieces and, if desired, spoon topping over each for added flavor before serving.
