Preparation
- In a mixing bowl, blend together the crust ingredients until crumbly. Press into the bottom of an 8x8-inch pan. Refrigerate for about 15 minutes.
- Beat the softened cream cheese until smooth. Gradually add in the filling ingredients, mixing until fluffy and free of lumps.
- Spread the cheesecake filling evenly over the chilled crust and smooth the top. Cover the pan with plastic wrap.
- Chill in the refrigerator for at least 4 hours, ideally overnight, for the filling to set.
- For the optional topping, heat berries with sweetener and lemon juice in a small saucepan until thickened. Cool to room temperature.
- Slice the chilled bars into 16 pieces and, if desired, spoon topping over each for added flavor before serving.
