Step-by-Step Instructions for Sicilian Meatloaf
- Preheat your oven to 350°F (175°C). Gather your ingredients and necessary equipment.
- Heat a tablespoon of olive oil over medium heat. Sauté red onion and red bell pepper until soft, about 5–7 minutes. Add minced garlic for the final minute, then cool.
- In a large mixing bowl, add ground beef, breadcrumbs, Parmesan cheese, and eggs. Incorporate the cooled vegetable mixture, tomato paste, salt, pepper, and parsley. Mix until well combined.
- Transfer the meat mixture onto a sheet of parchment paper, shaping it into an 8"x15" rectangle.
- Layer deli ham, basil leaves, and mozzarella cheese over the meat mixture.
- Roll the meatloaf tightly using the parchment paper to guide the roll. Pinch the seams to seal.
- Place the rolled meatloaf seam-side down on a baking sheet lined with parchment paper.
- Bake for 1 hour until the internal temperature reaches at least 160°F (70°C).
- Let the meatloaf rest for 10 minutes under tented foil before serving.
