Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your baking sheet with parchment paper.
  2. In a skillet over medium heat, heat about 2 tablespoons of olive oil. Add the chopped red onion and diced red bell pepper and cook for about 5 minutes.
  3. Add minced garlic to the skillet for 1-2 minutes. Remove from heat and let cool.
  4. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, eggs, tomato paste, salt, and pepper. Add cooled sautéed vegetables and parsley.
  5. Transfer the meat mixture onto a parchment paper and shape it into a rectangle, roughly 8"x15".
  6. Layer slices of deli ham, basil leaves, and shredded mozzarella cheese on the rectangle, leaving an inch of space at the edges.
  7. Roll the meatloaf using the parchment paper, forming a tight cylinder. Pinch and seal both ends.
  8. Place the rolled meatloaf seam-side down on the prepared baking sheet.
  9. Bake for 1 hour until the internal temperature reaches 160°F (70°C) and the top is browned.
  10. Let it rest for 10 minutes before serving with marinara sauce and pasta or zucchini noodles.
