  • 1 lb Italian Sausage sweet or spicy varieties
  • 2 cups Bell Peppers mix of red, yellow, and green
  • 1 medium Red Onion chopped
  • 2 cups Broccoli Florets
  • 1 medium Zucchini sliced
  • 1 lb Baby Potatoes halved
Seasoning
  • 3 tbsp Olive Oil for roasting
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste
Garnish (Optional)
  • 2 tbsp Fresh Parsley chopped

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the vegetables into bite-sized pieces.
  3. Slice the Italian sausage into bite-sized pieces and add to the mixing bowl.
  4. Drizzle with olive oil, then sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss to combine.
  5. Spread the mixture evenly on a sheet pan.
  6. Bake in the oven for 30-35 minutes, stirring halfway through.
  7. Remove from oven, garnish with chopped parsley, and serve warm.
