For the Pitas
  • 4 Pitas Soft or lightly toasted

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and prepare for assembly.
  2. In a large mixing bowl, combine chicken with olive oil, salt, pepper, garlic powder, and paprika. Toss to coat.
  3. Chop mixed vegetables into bite-sized pieces. Toss with olive oil, salt, and pepper.
  4. Spread chicken and vegetables evenly on a sheet pan. Roast for 20-25 minutes until chicken reaches 165°F (74°C).
  5. In a small bowl, mix Greek yogurt, ranch seasoning, and fresh herbs until smooth.
  6. About 5 minutes before the chicken is done, wrap pitas in foil and place in the oven to warm.
  7. Let chicken rest for 3-5 minutes before slicing. Fill warm pitas with chicken, roasted vegetables, and herby ranch.
