Cooking Instructions
- Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add 2 cloves of minced garlic and 1 tablespoon of grated ginger, sautéing for about 4-5 minutes until fragrant and lightly golden.
- Incorporate 1 cup of uncooked rice into the sautéed garlic and ginger mixture. Stir constantly for about 2 minutes to lightly toast the rice.
- Stir in 1 cup of diced pineapple, 2 tablespoons of sriracha, 2 tablespoons of coconut aminos, 1 tablespoon of sweetener, and a pinch of salt and red pepper flakes. Cook for about 1 minute.
- Pour in 1.5 cups of water and bring to a boil. Once bubbling, reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat, keep covered, and let it sit for 5 minutes. Fluff the rice with a fork before serving.
