Ingredients
  

For the Cooking Base
  • 2 tablespoons Olive Oil Coconut oil is a great tropical alternative.

  • 1 tablespoon Grated Ginger Can use ginger paste or ground ginger.
For the Rice
  • 1 cup Uncooked Rice Long-grain or jasmine rice works best.
  • 1.5 cups Water Essential for cooking rice.
For the Tropical Flavors
  • 1 cup Pineapple Fresh or canned are both great.
  • 2 tablespoons Sriracha Adjust to taste or use another hot sauce.
  • 2 tablespoons Coconut Aminos Soy sauce is a suitable alternative if gluten is not a concern.
  • 1 tablespoon Sweetener Sugar or maple syrup, adjust to taste.
For Seasoning
  • 1 teaspoon Salt Enhances overall flavor.
  • 1 teaspoon Red Pepper Flakes Adds extra heat.

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add 2 cloves of minced garlic and 1 tablespoon of grated ginger, sautéing for about 4-5 minutes until fragrant and lightly golden.
  2. Incorporate 1 cup of uncooked rice into the sautéed garlic and ginger mixture. Stir constantly for about 2 minutes to lightly toast the rice.
  3. Stir in 1 cup of diced pineapple, 2 tablespoons of sriracha, 2 tablespoons of coconut aminos, 1 tablespoon of sweetener, and a pinch of salt and red pepper flakes. Cook for about 1 minute.
  4. Pour in 1.5 cups of water and bring to a boil. Once bubbling, reduce heat to low, cover, and simmer for 15 minutes.
  5. Remove from heat, keep covered, and let it sit for 5 minutes. Fluff the rice with a fork before serving.
