Ingredients
  

For the Sauce
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 1 medium Bell pepper, chopped
  • 1 can Crushed tomatoes Canned is convenient
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder Adjust to taste
For Serving
  • 2 slices Crusty bread
  • 1 handful Fresh herbs Optional
  • 1 tablespoon Feta cheese Optional
  • 4 large Eggs Fresh is best

Method
 

Prepare the Sauce
  1. Heat olive oil in a skillet over medium heat. Add onion and cook for 5 minutes until translucent.
  2. Add bell pepper and sauté for another 5 minutes until softened.
  3. Stir in crushed tomatoes and spices, let simmer for 10 minutes until thickened.
Poach the Eggs
  1. Lower heat, create wells in sauce, crack eggs into each well. Cover and cook for 5-7 minutes until whites set and yolks are runny.
Toast the Bread
  1. Toast bread slices until golden brown, about 3-4 minutes, watching closely.
Assemble the Dish
  1. Spoon the poached eggs and sauce over the toasted bread. Garnish with herbs or feta if desired.
