  • 2 tbsp Canola Oil Olive oil works as a substitute.
  • 2 tbsp Kosher Salt Sea salt can also be used.
  • 1 tsp Ground Black Pepper Freshly ground for flavor.
For the Aromatics and Herbs
  • 2 tbsp Fresh Thyme Use dried thyme in smaller amounts.
  • 2 tbsp Fresh Rosemary Dried can be used; reduce quantity.
  • 1 tbsp Dried Oregano
  • 1 tbsp Italian Seasoning
  • 2 Yellow Onions Diced.
  • 4 cloves Minced Garlic
  • 4 cloves Whole Garlic Cloves
For the Vegetables and Sauce
  • 3 Carrots Chunked.
  • 2 tbsp Tomato Paste
  • 2 cups Beef Broth Homemade is ideal, store-bought is fine.
  • 2 tbsp Worcestershire Sauce Soy sauce can be used as an alternative.
  • 1 cup Red Wine A dry red like Cabernet Sauvignon or Merlot.
  • 2 leaves Bay Leaves Remove before serving.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C).
  2. Season the beef chuck roast with kosher salt and ground black pepper on all sides.
  3. In a large Dutch oven, heat canola oil and brown the roast on all sides, about 3-4 minutes per side.
  4. Add diced yellow onions and minced garlic, sautéing until fragrant, about 1 minute.
  5. Stir in fresh thyme, rosemary, oregano, and Italian seasoning, cooking for another minute.
  6. Mix in tomato paste, then gradually add beef broth, Worcestershire sauce, and red wine while scraping browned bits.
  7. Return the roast to the pot, surround with quartered onions, whole garlic cloves, and carrots.
  8. Cover and braise in the preheated oven for 3-4 hours or until tender.
  9. Once done, let the roast rest for 20 minutes before slicing.
