Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil over high heat. Once boiling, add the LoMein noodles and cook according to package instructions until al dente—usually about 6-8 minutes. Drain the noodles and rinse them under cold water to stop the cooking process and prevent sticking. Set aside.
  2. In a large skillet, heat peanut oil over medium-high heat until shimmering. Add the ground pork and sliced green onions, breaking up the meat as you cook. Sauté for about 5-6 minutes until the pork is browned and cooked through.
  3. While the pork is cooking, whisk together the sauce in a small bowl: chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha to taste.
  4. Once the pork is browned, add the cooked noodles and coleslaw mix directly to the skillet. Pour in the sauce, stirring gently to combine all ingredients.
  5. Using tongs, toss the noodle mixture gently for 2-3 minutes over medium heat, ensuring everything is evenly heated through. Garnish with remaining sliced green onions.
