Method
 

Step-by-Step Instructions
  1. In a large sauté pan, heat 2 tablespoons of olive oil over medium heat. Add 1/2 teaspoon of red pepper flakes and 2 minced garlic cloves. Sauté for 1 minute until fragrant.
  2. Add 2 cups of halved cherry tomatoes to the pan. Cook for 9–12 minutes, stirring occasionally, until the tomatoes blister and burst.
  3. Stir in 1/2 cup of vegetable broth and 1 tablespoon of fresh lemon juice. Simmer for about 5 minutes.
  4. Mix in 1/4 cup of roughly chopped fresh basil, lemon zest, and 1 teaspoon of sugar. Season with salt and black pepper. Cook for 2 minutes.
  5. In a separate non-stick pan, heat 2 tablespoons of olive oil. Season 4 cod fillets with salt and black pepper. Cook for about 3 minutes on each side.
  6. Pour the tomato basil sauce over the cod. Heat for 1 minute and serve immediately.
