Ingredients
  

For the Chicken Marinade
  • 1 lb Chicken Thighs or chicken breast/lamb
  • 3 Tbsp Olive Oil use extra virgin for richer taste
  • 2 Tbsp Red Wine Vinegar can substitute with white wine vinegar
  • 3 cloves Garlic fresh preferred, powdered can work
  • 1 Tbsp Dried Oregano substitute with Italian seasoning if needed
  • 1 tsp Ground Cumin replace with coriander for different flavor
  • 1 tsp Smoked Paprika use sweet paprika if desired
  • to taste Salt and Pepper
For the Tzatziki Sauce
  • 1 cup Greek Yogurt or any plain yogurt
  • 1 medium Cucumber can substitute with zucchini
  • 2 Tbsp Fresh Dill or dried dill in smaller amounts
  • 1 Tbsp Lemon Juice lime juice can be a substitute
For Assembling the Gyros
  • 4 pieces Pita Bread flatbreads or wraps can be used
  • 1 cup Cherry Tomatoes or diced bell peppers
  • 1 medium Red Onion or green onions/shallots
  • 2 cups Lettuce or other greens like spinach/arugula
  • 1 cup Feta Cheese or goat cheese for different flavor
  • 2 Tbsp Olive Oil (for drizzling)
  • to taste Fresh Parsley optional garnish

Method
 

Preparation Instructions
  1. In a bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, ground cumin, smoked paprika, and a pinch of salt and pepper. Add chicken thighs and coat well. Cover and refrigerate for at least 1 hour.
  2. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, fresh dill, and lemon juice. Stir until smooth, then taste and adjust seasoning with salt. Cover and refrigerate until ready.
  3. Preheat grill or grill pan over medium-high heat. Remove chicken from marinade and cook for about 5-7 minutes on each side until cooked through. Alternatively, bake in a preheated oven at 400°F for 20-25 minutes.
  4. Warm pita bread in a dry skillet for about 1 minute on each side until soft and pliable. Keep covered until serving.
  5. To assemble, lay a warm pita flat and top with grilled chicken, tzatziki sauce, cherry tomatoes, sliced red onion, lettuce, and crumbled feta cheese. Garnish with parsley if desired.
  6. Serve the assembled gyros immediately while warm and fresh. Drizzle with extra olive oil if desired.
