- In a mixing bowl, combine plain Greek yogurt, grated cucumber, fresh lemon juice, minced garlic, finely chopped mint, and a pinch of salt. Stir until well incorporated. Cover and refrigerate for at least 15 minutes.
- In a large bowl, combine ground beef (and ground lamb if using), finely grated onion, minced garlic, chopped parsley, chopped mint, and spices. Mix gently to combine.
- Shape the kofta mixture into meatballs about the size of a golf ball. Aim for 16-18 meatballs total and place them on a lined baking tray.
- For pan-frying, heat a skillet over medium heat with olive oil. Cook meatballs for 2-3 minutes per side until golden brown. For baking, preheat oven to 400°F (200°C) and bake for 18-20 minutes.
