Step-by-Step Instructions
  1. Begin by chopping the chicken breasts into bite-sized pieces and dicing the bacon, onion, and garlic. Gather your ingredients in one place.
  2. In a large skillet, heat over medium heat and add the bacon pieces. Cook for about 5–7 minutes until the bacon is crispy and golden brown.
  3. Using the same skillet with bacon drippings, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
  4. Add the chopped chicken to the skillet, seasoning it with salt, black pepper, paprika, and Italian seasoning. Cook for 5–7 minutes until browned and cooked through.
  5. Stir in the fresh spinach, cooking for an additional 2-3 minutes until wilted.
  6. Pour in the heavy cream, stirring to create a rich sauce. If using mozzarella, sprinkle it in now to melt.
  7. Gently fold the crispy bacon back into the skillet, mixing it with the creamy chicken and spinach mixture.
  8. Taste and adjust the seasonings as needed before serving hot.
