Ingredients
  

For the Chicken
  • 1.5 lbs Chicken Thighs or chicken breasts for a leaner option
  • 1 cup Buttermilk or milk with vinegar as a substitute
  • 1 tsp Salt for marinating
  • 1 cup Panko Bread Crumbs can use regular breadcrumbs
  • 0.5 cup Whole Wheat Flour or all-purpose flour
  • 1 tsp Paprika added for flavor
  • 1 tsp Italian Seasoning for seasoning
For the Hot Honey Sauce
  • 0.5 cup Honey for sweetness
  • 2 tbsp Sriracha adjust to taste
For the Bowls
  • 2 cups Cooked Rice as base
  • 2 cups Coleslaw fresh coleslaw recommended
  • 1 cup Sweet Pickles for crunch
For the Drizzle
  • 0.5 cup Mayonnaise to mix with hot honey sauce

Method
 

Preparation Steps
  1. In a large bowl, combine chicken thighs, buttermilk, and salt. Cover and refrigerate for at least 20 minutes or up to 8 hours.
  2. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  3. In a shallow bowl, combine panko breadcrumbs, whole wheat flour, paprika, and Italian seasoning. Coat each chicken piece in the mixture.
  4. Place the breaded chicken on the baking sheet and lightly spray the tops with cooking oil. Bake for about 25 minutes.
  5. In a small bowl, whisk together honey and Sriracha until smooth to prepare the hot honey sauce.
  6. Combine mayonnaise with 2 tablespoons of the hot honey mixture to create the drizzle.
  7. To assemble the bowls, start with rice, add coleslaw and sweet pickles, top with chicken, and drizzle the hot honey mayo.
  8. Serve the bowls warm and enjoy!
