- Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 1 minute. Add 1 finely chopped onion and 2 minced garlic cloves to sauté until fragrant and translucent, about 3-4 minutes.
- Add 1 pound of ground turkey, breaking it up with a spatula. Cook for 5-7 minutes until browned.
- Stir in 1 diced bell pepper and 1 grated carrot, sauté for 4-5 minutes until tender.
- Sprinkle in 3 tablespoons of soy sauce, 1 teaspoon of ground ginger, salt, and black pepper to taste. Let simmer for 2-3 minutes.
- In a separate pot, bring 1 cup of vegetable or chicken broth to a simmer. Stir in 2 cups of cooked rice, absorb for about 5 minutes.
- In serving bowls, layer the rice, topped with the turkey and vegetable mixture.
- Garnish with sliced green onions, toasted sesame seeds, and sriracha or hot sauce.
