  • 1 medium Bell pepper diced

For the Rice
  • 2 cups Cooked rice use leftover rice
  • 1 cup Vegetable or chicken broth adds depth of flavor
For Seasoning
  • 3 tablespoons Soy sauce for umami flavor
  • 1 teaspoon Ground ginger adds warmth
  • 1 to taste Black pepper freshly cracked
  • 1 to taste Salt to taste
For Toppings
  • 2 stems Green onions sliced
  • 2 tablespoons Sesame seeds toasted

  • 1/4 cup Cilantro chopped

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 1 minute. Add 1 finely chopped onion and 2 minced garlic cloves to sauté until fragrant and translucent, about 3-4 minutes.
  2. Add 1 pound of ground turkey, breaking it up with a spatula. Cook for 5-7 minutes until browned.
  3. Stir in 1 diced bell pepper and 1 grated carrot, sauté for 4-5 minutes until tender.
  4. Sprinkle in 3 tablespoons of soy sauce, 1 teaspoon of ground ginger, salt, and black pepper to taste. Let simmer for 2-3 minutes.
  5. In a separate pot, bring 1 cup of vegetable or chicken broth to a simmer. Stir in 2 cups of cooked rice, absorb for about 5 minutes.
  6. In serving bowls, layer the rice, topped with the turkey and vegetable mixture.
  7. Garnish with sliced green onions, toasted sesame seeds, and sriracha or hot sauce.
