  • 2 tablespoons maple syrup can substitute with brown sugar
  • 1/4 cup coconut aminos or tamari/soy sauce
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon toasted sesame oil
  • 1 pinch red pepper flakes adjust to taste
  • 1 teaspoon arrowroot powder or cornstarch for thickening
For the Filling
  • 1 tablespoon olive oil for sautéing
  • 1 pound ground beef can substitute with turkey, bison or venison
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 medium red bell pepper diced
  • 1 cup shredded carrots
  • 1 cup green onions sliced into 1" pieces
  • to taste kosher salt for seasoning
  • to taste ground pepper for seasoning
For Serving
  • 1 head Boston Bibb lettuce large, whole leaves
  • to taste sesame seeds for garnish
  • optional steamed white rice or cauliflower rice for serving

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and red pepper flakes. Mix in arrowroot powder if desired and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Add ground beef, breaking it up, and cook until browned, about 5 minutes.
  3. Stir in minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  4. Add diced red bell pepper and shredded carrots, sautéing for 3-4 minutes until tender.
  5. Pour the prepared sauce over the beef and veggies, stirring well. Reduce heat and simmer for 2-3 minutes.
  6. Fold in sliced green onions and season with salt and pepper to taste, cooking for another minute.
  7. Serve the beef mixture in large lettuce leaves, garnished with sesame seeds.
