  2. While the fries are baking, grab a medium bowl and combine the creamy feta cheese, plain yogurt, sour cream, minced garlic, and fresh lemon juice. Stir in chopped parsley, dill, dried oregano, and a pinch of salt. Mix everything until smooth and creamy, and set aside to let the flavors mingle for about 10 minutes.
  3. Once the fries are perfectly crispy and golden, remove them from the oven. Immediately sprinkle with salt to taste while they are still hot.
  4. Transfer the crispy fries to a serving platter, generously drizzling the prepared feta yogurt sauce over them. Top with additional crumbled feta and fresh herbs. Serve immediately.
